Advanced options
Cheap-but-drinkable red is correct: merlot or shiraz around the GBP 5-6 mark, since spice and sugar bury subtlety. The one rule: warm gently and NEVER boil: alcohol steams off from ~78C and the flavour turns stewed. Slow cooker on low is the party-proof method. A splash of ginger wine, sloe gin or brandy per batch is the traditional upgrade.
What The Mulled Wine Calculator Works Out
- Wine: guests x glasses x 125ml, divided into 750ml bottles and rounded up. A 125ml glass is the sensible serving for something drunk warm and sweet; a bottle pours six, so a dozen guests at two glasses each want four bottles.
- Per bottle, add: an orange (half sliced, half juiced: bitterness lives in long-steeped peel), 50g of sugar to taste, a cinnamon stick, three cloves and a star anise, with an optional 50ml of brandy or ginger wine added late so its alcohol survives. Whole spices over ground: powder makes mulled sludge no strainer redeems.
- Method: the one commandment is thermal. Never boil: alcohol departs as vapour from 78C and the fruit turns to compote shortly after. A gentle 15 to 20 minute infusion below a simmer, then hold warm; the slow cooker on low serves from the pot for hours.
- Glass size, sugar and fortifier (advanced): small mugs or generous glasses change the bottle count; sugar and brandy per bottle are editable and feed into the whole-batch shopping list.
- Whole-batch shopping (advanced): everything multiplied up for the trolley: oranges, sugar in grams and kilos, spice counts and the brandy in 70cl bottles.
- Cost (advanced): bottles at your wine price (cheap-but-sound merlot or shiraz at GBP 5 to GBP 6: cinnamon and clove bury exactly the subtleties the expensive bottle charges for) plus about GBP 1.20 of spices and orange per bottle and the brandy, shown per glass. Supermarket pre-mulled cartons compete on convenience, not cost.
- Batches (advanced): whether the lot fits your pot or slow cooker at 80% full, or needs a second pot or topping up as it goes.
- Alcohol-free version (advanced): litres of apple juice for drivers and non-drinkers, mulled with the same spices and orange and less sugar, so they get the ritual too.
- Units per glass (advanced): 125ml of 13% wine is about 1.6 units, plus the brandy's share. Warm wine reads stronger than it is and dehydrates faster; water within reach is hospitality, and heatproof glasses spare the trip to A&E. Leftovers reheat gently next day or graduate into the red-wine gravy.
