Classic thin-pancake ratio: 100g flour, 2 eggs and 300ml milk makes about 8 pancakes in a 20cm pan. American-style swaps some milk for raising agent and makes thicker, smaller pancakes. Rest the batter 30 minutes if you can.
What The Pancake Calculator Works Out
- Plain flour, eggs and milk: the classic English thin pancake runs on one ratio: 100g plain flour, 2 eggs and 300ml milk makes about eight pancakes in a 20cm pan, and it scales linearly, so 16 pancakes is double everything. Eggs are rounded to the nearest whole one.
- American style: a different formula on purpose: more flour (135g per 8), less milk (130ml), one egg, sugar and baking powder for lift, cooked in small rounds until bubbles burst on top, then flipped once.
- Method: whisk flour and eggs to a paste, loosen gradually with the milk (lumps come from adding liquid too fast), add a pinch of salt and a knob of melted butter, and rest the batter 30 minutes if you can; resting hydrates the flour and makes tenderer pancakes.
- Pan size (advanced): a bigger pan uses more batter per thin pancake in proportion to its area, so a 24cm pan gets about 5.5 pancakes from a batch rather than 8. American pancakes are poured small regardless of pan.
- Feeds (advanced): the planning figure is two to three thin pancakes each as dessert, more if pancakes are the meal, which on Shrove Tuesday they usually are. Enter your own per-person figure to see how many people the batch covers.
- Time at the stove (advanced): about 2 minutes per thin pancake per pan, or three American pancakes every 3 minutes, so a second pan halves the queue. The first pancake is ritually sacrificed to pan temperature.
- Toppings (advanced): a quarter lemon and a teaspoon of sugar per pancake, about 20ml of syrup, or 15g of chocolate spread, so you know how many lemons or jars to buy.
- Ingredient cost (advanced): flour at about GBP 0.80 per kg, milk and eggs at your prices, which lands a thin pancake at around 10p before toppings. Leftover batter keeps a day covered in the fridge; cooked pancakes freeze interleaved with baking paper and revive in a dry pan.
